Nice and sharp knife. Very solid build quality. Shipping time was also reasonable
First I will say I am a working professional chef . I have been looking for a new knife for the kitchen and decided to give this a try. I am far from disappointed !!! I love this blade . It has a wonderful feel and great balance , not to mention it can get crazyy sharp. Yes the knife comes very sharp, bt after putting my stones on it it is sharper than I could even imagine . Very high quality steel. Effortless cutting and slicing, and after a full day I am not fatigued. Nice heft as a german knife would with the sharpness and agility of Japanese. I highly recommend this blade. will be getting another one as a backup .

This is an incredible knife. I do a lot of cooking being retired and 70 years old. I have always wanted a really good knife, as I'm tired of thing's being hard to cut etc. When this knife was delivered their was a slight problem that I did not understand. I emailed them about 11 pm that night, and a gentleman, Sam emailed me back in 1 1/2 hours that night. Not understanding everything he was saying, the emails went back and forth for 3 days. I can't believe that their is finally a company that vales their reputation, and takes the time to help someone that buy's their products. I strongly suggest that if you are looking for a quality kitchen knife, this is the knife for you. BE CAREFUL this knife is sharp, and I suggest that after each use you DON'T put it in the dish washer hand wash and hand dry only.
I’m a Product Designer, a master craftsman, an ex-professional modelmaker, and a skilled amateur chef. I know knives, sharpening and knife skills. This knife is a replacement for an irreplaceable knife my Wife LOVED, that some friends lost for us. It was a very small but wide sushi knife I bought for her in Asakusa, Tokyo, and replaced the traditional handle with a cherry wood and brass/epoxy one I sculpted especially for Her hand. Needless to say, replacing it was a challenge. This one is slightly bigger, but miles better! She LOVES it even more! Plus, it doesn’t rust. Keeps an edge like crazy, super-fine angle, gorgeous Damascus steel treatment, an exquisite handle (truly gorgeous! Excellent ergonomics, Fantastic fabrication and finishing) and function like a dream. If you can swing it, buy one. You will be happy too. Makes a great gift, in a nice presentation box (paper board, with good explanation graphics and great foam and flocking interior for your model) that will flatter even the most discerning recipient. I’ll be lusting after more, I cna tell you. If I didn’t have a fabulous collection in my custom made (by me) knife rack already, I’d be running up the debt right now!
have owned this knife for two years, and every time I use it, I remind myself to write a review. I bought this knife to use with the sourdough bread I bake, and it has been the perfect knife for slicing this wonderfully crusty, chewy bread. Other knives tear the bread, which is heart-breaking after all the time and effort that goes into baking sourdough bread. It’s a labor of love for me, and this beautiful knife is perfect for the task of cutting even slices. In addition, this knife is well-balanced and therefore easy to hold. One caution: the knife is fairly heavy...a good thing, I think. The beauty of this knife, including the design on the blade, makes it a lovely gift for the bread bakers in your midst. Glad to be able to finally write this review...the manufacturer has made an excellent product, so the least I can do is say so and encourage others seeking a good bread knife to look here too.
Knife very balanced, good cutting!
I can't say how long the edge will last, but it's become my go-to knife for most kitchen slicing and chopping tasks. I don't put it in the dishwasher, in hopes of preserving the edge a little longer. I did see a hint of rust on the blade near the handle the other day, but that seems to have disappeared. The knife is long and well-balanced enough to almost take the place of a chef's knife, and the comfortable handle allows it to be used for paring, if necessary. The blade is very shiny, and sliced vegetables don't stick onto it as much as they do with my other knives, although they do have to be encouraged to drop off. So, if you only have room for one good knife in your collection, this is a good place to start. If you can manage more, get a chef's knife and a paring knife too. I do wash it by hand, to preserve the edge. The one drawback I have found so far is that the attractive logo on the blade keeps fooling my fingers into thinking something is stuck on the knife, and then I end up washing it (carefully) longer than required.
